Ingredients
  

  • 1/2 fresh yeast
  • 500 lukewarm water
  • 100 ml yellow corn flour
  • 700 g wheat flour

Instructions
 

  • Dissolve the yeast in the water.
  • Add the salt and the flour.
  • If you have a stand mixer, mix 5 min, or just knead a couple of minutes by hand.
  • Cover with kitchen towel. Rest 30 min
  • Put the Dutch oven in a cold oven and set at 220°C (conventional heat), app. 30 min.
  • Transfer the dough with a rubber spatula to a floured surface. Sprinkle flour on the dough and, by hands, fold the dough. You don’t have to knead it, but just fold it either to the middle and then under itself or just under itself into a ball. Shape the dough into a loaf.
  • Sprinkle some corn flour next to the loaf and place the loaf on top of the corn flour. Sprinkle corn flour on top and gently press, so it sticks to the loaf. Rest 30 min.
  • Carefully with potholders (it´s very hot) remove the lid from the dutch oven and put it on a trivet. Transfer the loaf with both hands to the dutch oven and score it. Put the lid on (with potholders) and bake for 30 min.
  • Remove the lid (with potholders) and bake for another 15 min until golden brown.
  • Remove the bread and wrap it in a kitchen towel and let it cool on a rack.
