Chicken meatballs with mashed potatoes
Equipment
- Frying pan

Ingredients
Meatballs
- 400 g minced chicken meat
- 1 egg
- 1,5 dl instant oatmeal
- 1 onion
- 2 cloves garlic
- 1 tsp salt
- 1 tsp paprika
- ½ tsp curry powder
- ½ tsp cumin powder
- 4 tbsp canola oil
Sauce
- 3 tbsp wheat flour
- canola oil if necessary
- 300 ml water
- 3 tsp tomato puré/paste
Mashed potatoes
- 1,5 kg potatoes
- 2 L water
- 1 tsp salt
- 70 g margarine or butter
- 1 tsp vegetable bouillon powder
- 1 cup hot milk
Peas
- 400 g frozen peas
- 1 tsp salt
- 1 L water
Instructions
Meat balls
- Chop the onion and garlic and transfer to a bowl.
- Add the rest of the ingredients and mix.
- Rest 15 min.
- It is best if you shape the balls before heating the pan. Put them on a plate after shaping.You can shape the meat into balls with a measuring spoon and a teaspoon.
- Put the oil in the pan and heat on medium heat.
- Add the balls and fry app. 10-15 min. Turn with tongs/fork.
- Remove from pan and transfer to a plate.
- Add the flour and fry gently a couple of minutes. Add more oil if needed.
- Carefully add the water and whisk until there are no more lumps. If there are lumps, strain the sauce using a fine strainer and a spoon. Add the tomatopuré and season with salt.
- Put the meatballs back in the pan. You can add more water if you want more sauce.
- Put a lid on and reduce heat. Cook 10 min.
Mashed potatoes
- Peel the potatoes and cut in halves.
- Boil the water and add the potatoes and salt.
- Boil 25 min. and drain.
- Mash the potatoes.
- Add the margarine/butter and milk, mix.
- Season with bouillon powder.
Peas
- Add the frozen peas and water in a pot and boil 10 min. Drain.
Notes
If you have leftover meatballs, you can make meatball sandwich with baguette and shredded mozzarella cheese. Cut the baguette in half, add the meatballs and cheese.
Heat in oven 200°C (fan) until the cheese is melted. Add some iceberg salt and enjoy.
